Kale Soup


1 lb kale

1 Tbsp olive oil

1 yellow onion, sliced thinly

1/4 lb keilbasa

1/4 lb linguica

4 large potatoes, diced

4 cups low sodium chicken broth

(2) 15 oz cans cannellini beans, rinsed and drained

ground black pepper

1. Trim large ribs from kale and slice into thin strips.  Put kale strips in bowl of cold water and soak for 1 hour.  Drain well.

2.  Add oil, onions, linguica and keilbasa to crockpot.  Stir. Cover and cook on high for 30 minutes.

3.  Add potatoes, chicken broth, kale and beans.  Cover and cook on high for 3 hours or on low for 6 hours.

4.  Add pepper to taste.
