Tabbouleh with Quinoa


1/2 cup quinoa

1/2 cup  fresh mint, chopped

1/2 cup  parsley, chopped

1 cup  cucumber, diced

1 cup cherry tomatoes, halved

2 tbsp olive oil

2 garlic cloves, minced

1/2 cup lemon juice


1. Rinse quinoa and place in bowl with enough water to cover.

2. Let quinoa sit for approximately 4 hours to absorb water.

3. Strain quinoa.  Do this 2 more times until quinoa sprouts.

4. In large bowl, combine quinoa with remaining ingredients.  Serve chilled.
